I made a tiered cake tray for a wedding some years back; the central support posts were made from quadrant moulding glued into cylinders and sanded round. The top handle had a length of threaded rod long enough to pass through all the shelves and the centres of the supports and into a T-nut embedded in the base. The shelves were made from MDF.

Hi Tony, do you want the shelves to rotate?? If so, you could use a bit of PVC Pipe in between the MDF, with Lazy Susan bearings, to allow it to rotate. You could use successive decreasing sizes for the column.
If you don't, then use MDF boards with a hole diameter to suit the PVC pipe and small angle brackets to hold them in place. If you wanted more stability, drill holes to siut a particular diameter dowel and slide together and apply glue to hold it in place.
