    it depends. Sorry to be so imprecise.

    If you can brace the ply by running 2 or 3, 70 x 30s on edge down the long dimension, 15 mm structural or C/D ply (or even 12 mm) would be fine.
    If the ply has to span the 1200 mm dimension, then it needs to be much thicker, like around 40 mm.

    Personally I'd use 15 or 16 mm stuff, primarily because 15 mm is thick enough to hold a screw or three when you want to screw a planing stop or similar to the bench.

    Something I should have mentioned - if you are looking for cheap ply or MDF, have a look at Gumtree, Freecycle or similar online services for 'free to pick up' items - my neighbours picked up about 20 x 1220x2400 sheets of used ply to use to protect their back deck while doing extensions for the price of a car trip to get it. You may be able to pick up some kitchen counter top off cuts or other stuff that you can glue up into something useful (and cheep).
