Hardness determines more about sharpenabilty than white vs. blue, so it'll be difficult to tell by hand what they are as you'll be judging difficulty sharpening based on the hardness thinking it might be something else.
I'd imagine they're old enough to be yasuki white 1 or 2.
XRF would be a realistic way to know exactly what they are (it would tell you everything in terms of the alloying except carbon %).
Those are nice quality chisels, made to the same standard as a lot of chisels that are expensive now (and without the over-the-top hand filework that doesn't do anything to improve chisel performance). You'll enjoy using them. I've taken to using only older used chisels and gotten rid of all of my "known" maker chisels other than three rare chisels that I don't actually use.

I’m really happy with them so far. As you mention they seem to be high quality chisels without the bells and whistles (which I don’t buy into much anyway)
I will post again with my thoughts after some heavy use to give people a better idea if they come across some for sale in the future.
