Shimatani Deba - first impressions
Following a suggestion from Neil I acquired a SHIMATANI Damascus DEBA knife 180mm/Blue steel:

and it's proving a wonderful tool, as you'd expect following Neil's sage advice.
There's plenty of heft in it, has a slightly hollow back and it looks drop-dead gorgeous with the subtle Damascus etching on the main bevel.
For cutting hard veggies it's very capable and it went like a hot knife through butter filleting a Snapper.Cheers, Ern

Hi Ern,
Nice aquisition. A good thick Deba is great for fish, plenty of control, plus heft.
Must admit that I have been looking at that SHIMATANI knife for quite some time, just have not been able to justify yet another kitchen knife.
