I see no advantage in using any kind of highfalutin word-processing software for email and forums. They add too many "features" such as the one you describe, and can be a bear to read by only marginally compatible other software - especially email recipients.
Try this instead:
Use Notepad to compose your text. Wordwrap ON (temporarily) for your benefit. Save or not, according to your needs.
Before uploading, set Wordwrap OFF.
Then upload to the target software - email messaging, forum, etc.: Edit/SelectAll/Copy, Paste.
If the target software has bells and whistles, features, etc., enable in the target editor.
Submit.

Allan,
Jigsaw has it right, SHIFT + ENTER is Line Feed, i.e it starts a new line for the text, while ENTER is Carriage Return, now used to seperate paragraphs.
So by typing a line pressing ENTER, and continuing the text, you are adding paragraph breaks rather than line breaks to the text. As we all know, a new para is a new sentence and should start with a capital letter.
Incidently, why are you bothering to try to manually control text flow in an email anyway. OK, it's valid for setting paragraph breaks or listing points etc, but for general text it is not neccesary because the email reader software will arrange the text to optimally fit within the display window, which can be any size.
In the course of a day I can use 4 different computers with different screen sizes. It is a lot easier on the eyes if the manual formatting of the text is kept to a minimum, so that the software can do it's job efficiently. After all, it is the only thing in the world that knows with certainty what size window it has to work with.
I'm not trying to have a go at you, just explain the cause of your problem, and the ways to avoid it.
