I understand and thank you as they truly are amazing chisels.
You might want to reach out to Eddie about the Adria handles as I do not have particularly large hands and my dovetail and carcase saw handles both fit well. My guess is that they will be too small for you.

The handles are a standard size but I have heard people with large hands say they file the curved tips on the extremities of handles back until it feels right. This would fix the problem for most people but if you have massive hands it is probably still a problem and your suggestion is probably the only option.

Chippy, some answers to your questions:
The main difference between the bew Cabinet Chisels and the Ultimax range is the sockets. The Cabinets have a sock that is integral with the blade (one piece), where the Ultimax has a brass socket that is attached to the blade. The production cost savings are in time and materials.
The steel is identical in type and heat treatment (HSS M2 4x temper & cryo).
The handles are not glued in, and so can be tapped out if you wish to replace them with your own.
Handles are a traditional design which is easier to produce.
Trent hasn't answered the questions on the Pigstickers & Mortise Chisels yet, as he wanted to concentrate on the answers to the Cabinet range (given that they are the subject of the Group Buy).

Hope it's not too late, however, whilst I have tentative approval from SWMBO, put me down for a complete set (7) of the H&S chisels and a roll.
Can you buy a box separately to house them all, as the roll only has room for 6?

Chippy, I've just been discussing your questions on the Pig Stickers & Mortise Chisels with Trent, and he would prefer you to email him about that. Thanks. I think I might hold off for the moment and try and test drive a few handles first before I buy two expensive saws. My carving skills are not strong, so I am reluctant to make a handle! Perhaps a custom-made saw is in my future!

Harold & Saxon chisel socket angles
In the Ultimax range the sockets have an included angle of 10 degress. The new Cabinet range is an angle of 8 degrees. Obviously the steeper the angle the firmer the handle will be in the socket.
