    Default The "Alburger"

    My own concoction which was a real success when I had
    a hamburger/fish and chip shop. Regular customers would
    come from miles around to get them.

    Get your butcher to make up some mince (preferably
    about 60% beef and 40% lamb).

    Use about a half kilo of mince.
    Place into a bowl.
    Add 2 eggs, a tablespoon of breadcrumbs, a teaspoon
    of oregano, a couple of shakes of mixed spices.
    Mix thoroughly by hand then shape into a ball by
    pounding between each hand.

    Slice up some onion and red Jalapeno chillies and
    mix them together.

    Place the meat on the hotplate and flatten to about
    1 cm thick and 14 cms diameter. Lightly sprinkle hot
    chilli powder on the meat. Begin cooking the onions and
    chillies at the same time as the meat.

    Take a sliced soft bun and toast it lightly under the
    griller of your stove. Add a touch of margarine to the
    inner surfaces of the bun, add lettuce, the burger
    pattie, the onions and chillies and hot chilli sauce,
    pepper and salt. (I always used Maggi Hot Chilli Sauce).

    Guaranteed to warm the cockles of your heart.
    And remember, chillies are no good unless they
    burn twice - if you know what I mean.

    I had about 15 factory workers in my shop when I was
    cooking three Alburgers on the hotplate. They took off
    like rabbits when they got a sniff of them.

    I had one customer, a local Council worker, who decided
    to try one of my Alburgers and I only made it medium
    strength for him to try. The following night he came to
    the door of my shop and bellowed out, "He tried to kill
    me, he tried to kill me with a hot hamburger". The factory
    workers thought it was hilarious. Of course the customer
    kept coming back to our shop but never again for an
    Alburger. He was a delight to have as a customer and
    we shared many laughs over that incident.
