Geoffs Strawberry Jam
Strawberry Jam
1 kg ripe strawberries
1 kg sugar
Wash and place strawberries into pan, covering each layer with sugar. Mash strawberries and sugar together with potato masher. Place on gentle heat and bring to boil slowly, stirring occasionally. Skim foam of well and boil gently until jam sets when tested on a cold plate. (approx 60 mins).
Place into sterilized jars and seal.
Makes approx 3 jars (375 ml).
Perfect on Pancakes
