Bevan, I have to wonder if they can get enough moisture under the membrane if so little water is used. (OK, I know it's only $20, but.....). May have to take the risk eh?

Having said that, I went searching Big Wubbleyew and they had nuthink, so the intention was there, you see. Thing is that I have boiling them so down pat it's ridiculous. If I was to weigh the environmental cost of the manufacturing of the egg cooker against the loss of a litre of water once every 10 days, I migh.....stop it! I SAID STOP IT!

Going back to the shed now to do some sanding......

Mmmmm. It does do poached eggs though.......AND omelettes.......

So you are turning away from your fundamentalist devotion to the boiled egg and soiling your soul with poached and scrambled ?

I'm lazy I suppose (actually there is no doubt). If I want poached I just bring water to boil, turn off heat, once bubbling has stopped crack a very fresh egg into it and wait a bit.

Poached eggs should always have running yokes.

And we have already discussed the omelette...

Here is a curve ball for you. A couple of weeks ago we discovered a fantastic proper french crepe place in brissy. The menu was an epic read and it got me thinking about...

    wait for it...

a crepe degustation. You would need 3 - 4 people. 6 - 8 courses, an arc of flavours from savory to sweet, 1/3 or 1/4 of each crepe each. Just a bite...

Poached pear, brea and candied walnuts was superb and delicate... can't wait to go back.

Harrr, that's funny, but now you need to wait for it....the flett-meister and I may just be back in Bris-vegas towards the end of September. No firm plans, but a loose idea....

    Whereabouts in Brizzie?

(and, ah, after today's lunch, it's not my soul that I'm concerned about soiling...)

I recently saw on Better Homes and Gardens a silicon egg boiler. It has 6 egg shaped silicon containers, into which you crack the raw egg. Then you put the top on it and place it in the holder, which holds up to 6 eggs. You then place the holder and eggs into a pot of water and boil them. When done, you remove the top and tip out a perfectly shaped hard boiled egg, ready for slicing into a salad. Unfortunately I didn't see where to get them, by Ikea sell silicon cupcake patties, so they may stock them. Seems like the kind of thing they would sell.

Do you have a link for them?

I did try cooking about 8 and then peeling them, back in the fridge for easy use. They didn't go so well - after 1 or 2 days I noticed the cooked whites were losing fluid to the bottom of the container, so they have to be peeled and eaten fairly soon (say within 6 hours I suppose).

I do 7 eggs, one for each day, every week, and find that if I peel them they go slimy after a couple of days in the frig.

I now leave them unpeeled in the frig and I find that they last for a whole week and if anything peel easier after a couple of days.

Yep. I suspect they're ok for 12-14 days (actually I know they are).

As a "just in case" I point the pierced end up so no moisture can drip out. I doubt it makes any difference, but a man has to be anal about something!

I have read some online reviews and apparently not all those egg containers work well. It seems the silicone ones are ok but some others stick to the egg.

It would be interesting to cook them in the containers and refrigerate them still in it and see how they last.

That sounds like it would probably work.

I missed out on the egg cookers at Aldi a couple of weeks ago, but I wasn't all that miffed. I'm getting great results now with pricking the eggs (with my home made prick-of-a-device: a 5g stainless steel screw that sticks through a piece of MDF by 1.5mm - tap on and screw the egg onto it back and forth). Boil for the required time, into a sink of cold water, dry them, and into the fridge. Really really easy to peel.

The free-range eggs from the Food Co-Op are $5.60 a doz for quite large eggs at 66-67g each. I've also gotten into the habit of buying them well enough in advance to age them nicely by the time I'm ready to boil them. So the eggs that I'm currently boiling were purchased on the 19th Aug (IIRC) so 3 weeks from purchase. By the time I get to the doz that I bought on 4th Sept they should be 2½-3 weeks old too. Pretty sure these eggs are fairly freshly laid when they hit the shop - the Food Co-Op Guy (FCOG) seems to think that they take all of his eggs.

A friend sent me up some of his home grown eggs (smaller at 40-50g, and duck egg blue) that come from his South American hens. Can never remember the name but it ends in ....cana (Chookcana?). They were an interesting diversion with a more delicate flavour and a very pale yellow yolk - distinctly yellow as opposed to the usual amber colour. Had one before a regular egg today so the taste comparison was absolute - I reckon the regular egg wins actually.

He must get a helluva lot of eggs - I think he's got something like 30 birds - and it's just him by himself!

Keep them covered with water and they will last for up to maybe a week in the refrigerator. It helps if you change the water every two days or so.
