Shiro Miso Dip - Veg/Vegan/Dairy Free/Gluten Free
I wiped this up, and it worked a treat. It would be great if you ever had visitors with dietary needs, or on a low fat, carb or sugar diet.
Shiro Miso is just White Rice Miso that has is only fermented for a short period (available at most asian grocers and even the super market), giving a mellow slightly sweet favor, that is only mildly salty.
I had it with some tasty sausages.
Shiro Miso Dip
- 1 Cup of Shiro Miso
- 1/2 Cup of Toasted Sesame Seed
- 1 small clove of garlic
- 1 cm cube fresh ginger root (skin removed)
- Juice of Half a Lemon
- 1/2 teaspoon wasabi paste
Blend all ingredients in a food process until smooth. It comes out thick and creamy, and tastes, slightly sweet, with a hint of smoke sesame.
The garlic, ginger, lemon, and wasabi, should be used sparingly. So as to not overpower the Miso.

Gluten free but most of the miso my Japanese wife serves up is high in salt. Check the packet to check.
Whatever note you blow youre never more than a semitone away from the correct one....(Miles Davis)

Japanese Food is generally high in salt. Shiro Miso is not as salty as most miso.
