I still shoot 4x5 B&W with views on a rail. Schneider lenses but like my Rhodie 210 at f/22 best of all. Ilford D400 in D76 has the longest scale I have ever seen.
I have been known to use 6cm x 9cm backs and TMax but keep that a secret.
Right now, I'm fooling with some metal cans as pin-hole cameras, scored some 5" x 7" B&W sheet film. Dip and dunk in trays, I'm afraid.
Some interesting psych studies over the years = people pay more attention to detail in B&W. Just as long as you do the shot so there's no mental struggle to guess at the probable colors in the scene. (Trees are green, sky is blue, clouds & snow are white/gray. . . those kinds of things.)
