    keep it moving side to side a little more quickly (or constantly).

    The brown is a sign of heat, but I'd hone it and use it before determining that it got too overheated to use. Color is a function of temperature and duration - brown is a temper just after straw, and it was probably a short time, so there's no guarantee you'll notice anything using it.

    While sharpening, I noticed that I can place the blade down at the angle where it "registers" against the bevel and due to the hollow grind, I don't have to take off much metal to create the secondary bevel. Does this mean that I don't have to deliberately raise the angle to create a secondary bevel, as the hollow grind does that by itself?
