Just to see how the honing wheel performs on an out-cannel gouge I pulled out my ancient Titan and gave it a run.
A few passes was enough to polish out the existing grind wheel marks - probably from an 80 grit wheel.
The result was plenty sharp when tested on a bit of pine, though there was a short section that looked dubbed over. That was quite possibly left from other sharpening efforts but I mention it in case.

Just out of interest I charged the honing wheel with Flexcut Gold and it didn't jump out as clearly better than the white compound supplied. Possibly a little more aggressive. It contains Alox and Titanium Oxide.
All up, I prefer the Veritas honing compound. On the hard felt buffing wheel it's quite aggressive and almost puts a burr on western knives. It contains Alox and Chromium Oxide.Cheers, Ern

I set about lengthening the bevels on a 10" french cook's knife, freehanding as usual, and made a hash of it. So I installed a Tormek BGM to use an existing Sheppach large knife clamp and a newly bought small one.
Worked fine.
The small one gets some ground off the top edge of the bottom clamp to achieve a reasonable angle on small knives.
Can't show you a pic - the upload manager isn't managing.
One of the things that makes this rig easy to use is having it spin 'backwards' so I can see what's happening with the knife edge.Cheers, Ern
