If you're after a recommendation of sharpening stones go Shapton. I've got both Shapton and King stones. I started off with King stones as i didn't know better thinking the specialty stores (Carbatec/Timbecon) must have the best stuff/best value for money. The moment i discovered Shapton, never will i buy any other stone, they are marginally more expensive than King stones, but you get a significantly better stone not to mention its very handy storage box which more than justifies the slightly higher asking price.

If we are getting into recommending one brand of man made waterstone over another I always suggest people take look at Stuart Tierney's (also known as ‘Schtoo’ on this and some other forums) thorough investigation of the commonly available waterstones from Japan and his analysis of their relative performance.

Waterstone testing, the results. Part I. << Tools from Japan blog.

Waterstone testing, the results. Part II. << Tools from Japan blog.

Waterstone testing part III, what’s the stone actually doing? << Tools from Japan blog.

Waterstone testing part IV; how flat is ‘flat’? << Tools from Japan blog.

It's a great shame that he has closed his online shop down. I always valued his advice and was always satisfied with what he sent me.
    Stay sharp and stay safe!

I don't have a huge amount to add to this thread apart from to say... the Cerax 1/3k an awesome stone. It's astonishingly good. The Cerax 3k or 'Ouka' is probably the most perfect waterstone I've ever used.

Being a chef i have a wide variety of knives and stones, (DMT, EZE LAP,Chefs choice for Diamond, Shapton, King, Sun Tiger for the water from 120 to 12000 grit..Generally depending on what im sharpening and how dull it it i start with the coarse diamond or very coarse if i want o retip a blade and progress onto either the diamond stones, if im in a hurry or water if ive got time on my hands..i like both the king and Shapton( yes the box is handy ) but ive made wooden holders for the onew with the boxes.
