Greetings,
Have a look at this web site http://www.wood-database.com/ as it contains reasonably colour accurate photos of a wide range of wood samples. It references some Australian timbers, but not a big range. Maybe one of the other Forum members can suggest an Australian web site that has good photos of Aussie Timber samples.
You should be able to select some Aussie timbers that will give you the appearance you're looking for.
Regards,

Hmm from my stash I would think of:
Main board - Silver Ash, Jararanda or Maple
Stripes (bit hard to see colours) - Blackbean or Blackwood for brown, Red Ash for orange, Red/Blue Gum for reds, the above board timbers for white, Avacado or Locust for yellow, Ebony or Gidgee for blackNeil____________________________________________Every day presents an opportunity to learn something new

Wooden Chopping Boards
I read an article a few years ago about how wooden cutting boards were better and safer to use than the plastic things that sometimes are used because the wood has a natural antibacterial effect on germs that is not found from plastic.
