Cedar or ash
I'm wondering if cedar or ash would be better to put hot plater on (not directly but on metal studs) as i wood like it not to burn.

Personally, I'd go with using the ash as it's a harder timber than the cedar, imho, that is. depending on how hot the item is you place on it and how close it gets to the timber, you may eventually get surface scorch marks on the timber. However, if you use a darker-coloured hardwood, any surface scorching may not be as noticeable for longer.
cheers
