General purpose knife required
Can anyone please advise on a good quality knife with a wooden handle like that attached that keeps it edge well, that can be sharpened with a 9" kitchen steel. I have actually purchased the one shown, but the blade is too flexible and won't hold an edge.
I use it for general domestic stuff like opening letters and parcels, slicing open hard plastic wrap on tools and screws etc, and even cutting the wrap on the delivered newspaper. It is alos used for workshop stuff like cutting leather and plastic, and even scoring lines on woodregards,

Dengy, I use a "Hacking" knife. They were originally designed to hack into timber, assisted by hammer blows.
I have a Footprint version (NOS), but here is the Lee Valley version.Pat

I suggest there is a Mora knife which might suit your needs, even one with a laminated blade.

I think a Sloyd style knife (traditional Swedish wood carving knife) as made by Mora might work.

Universal household utility cutter.
IMHO a good quality cutter for domestic purposes would be like the one pictured below. It has good gripping characteristics and a reasonable length blade that would be useful in most household applications and yet lends itself to commercial or outdoor use as well. In some suburbs of many towns in the US you will find this cutter is the knife of choice of many householders. I don'y think it's available in Australia anymore but I'm informed it's readily available over the net. It only comes in one colour unfortunately but the brass hand grip can be polished.

Opinel make knives in various sizes. They're a folding knife but they have a locking ring fitted. Good carbon steel. Also available in stainless steel but I don't have any experience with the stainless ones.
Be aware, they have a (well the ones that still still look like wood) timber handle which can stick the blade shut and may need to be knocked open.......but that's such a cool thing to do....We don't know how lucky we are......

For Mora (laminated blade) and Opinel (folding) both carbon steel.
IMO best utility knives on the market.

I was given a wonderful little knife made by J. Marttini in Finland. It's so lovely, I use it for everything even though I think it's designed for filleting elves. It is stainless but it is alloyed with moon-beams and takes and holds a fine, fine edge. But seriously, i don't mind a stainless utility knife because I often use it to take cuttings and other 'wet' tasks and it's good to know I don't need to baby it too much.
That said I love the Opinel too....I'll just make the other bits smaller.

Hey hiroller, thanks for this information, I ordered the Mora Classic #3 knife from the mob you showed above.
Unfortunately, Bronzemoon Outdoors ( Anglo Pacific Trading Aust) have a bad record of customer service, very bad, as I have found out to my detriment. My wife found a website full of complaints about them, and they have not answered my email about delivery.
I think that is $50 down the drain, as they did not use PayPalregards,

Hi Dengue, nice choice in knife. I was thinking if of a Sloyd style knife for myself.
Really sorry to hear about your purchasing issues.
I hadn't heard of this mob before but have done a bit of homework this afternoon. It looks like they don't carry any stock and import each item when ordered resulting in a multi week delay.
Looks like communication isn't there sting point. It seems that you may get a response by emailing them that you are going to the ACCC of they don't respond.
I hope it works out for you. If you paid by Credit Card, you should be able to cancel the payment by calling your bank.
