    I use the set of slides here by Major Panic as a visual reference for electrolysis.

    I use it a lot and haven't had any issues with hydrogen production.

    the phosphoric acid also converts Fe2O3 to FePO4 which is a much more inert material to air than Fe2O3 which is porous to air. However if there is a lot of Fe203 a scaly more fragile layer of FePO4 is also formed which may not adhere all that well to the Fe underneath and if it breaks off it can let air in again.

    I'll vote for citric acid for bits that can't be electrolysed, seems to me to be less likely to re rust than vinegar treated steel and less likely to develop deep runaway pits.
