    Probably depends on which epoxy you're using and ambient conditions. For example, using Bote Cote's 1:1 wood glue I've found that if I finish glue up just before dark (about 5pm-ish this time of year) then in the morning the squeeze out will be nicely rubbery and easy to get rid of.
    You know you're making progress when there's sawdust in your coffee.

    That is a very true general observation.

    Generally in fair weather, getting things glued up will be ready to go the next day.

    But getting to know your epoxy is important.

    In Oz in Summer, getting the parts together one day means they will probably be ready to unscrew and handle the next. But check the epoxy seems rock hard with a fingernail.

    On days between seasons, when temperatures drop suddenly at the end of the day it can mean the epoxy is still soft the next. (it does depend on the epoxy to some extent too). However if the parts are glued a couple of hours before the temperature starts dropping they are often also ready for the next day.

    Particularly susceptible for slow overnight cures is a fairing mix of epoxy and lightweight filler light Q-cels. I would generally try to get that all in place by midday if I aimed to be sanding it the next day.

    This won't be accurate for everywhere or with all epoxies, but it shows how a time frame can make a big difference if you need to work on the boat the next day.

    It was something we learned a lot about in a production setup.
