Break glue joints
A friend of mine asked me to remake a maple bar chair into a regular chair. I couldn't just cut the legs off because she wanted to keep the leg flair at the bottom. Having no experience at this, all I knew to try was soaking the joints. After an all night soak I was unable to budge the leg braces with a mallet. It's a manufactured chair and the leg braces are dowels, but I have no idea what kind of glue they used. Any ideas??

Without knowing what kind of glue was used, it is difficult to say. If it was PVA, you are pretty much stuffed.

AFAIK, the only glue that you can successfully "unglue" is hide glue.
If they are manufactured chairs it's unlikely that hide glue would have been used.
Like Bob says, you pretty much stuffed unfortunately.

Sorry. PVA is that standard yellow glue we all use. Poly vinyl something or other. It dries stronger than the wood, so it is darn near impossible to break the bond without tearing up the joint.

Also soaking it in water would have swollen the timber and made the joints really tight

If you absolutely have to take it apart, maybe you could take a small saw blade and cut the joints apart. This would cut your dowels in half, so you might need to drill them out and replace. I would only do this if you "had" to take them apart/
