You should leave the bread board ends a bit longer unless you know for certain that the timber is at its highest moisture content and will only shrink. Otherwise they may grow past the ends which isn't a good look.

If I made the bread board end a bit longer, could I just attach another one to the end grain so it goes all around the table? I woulnd't have to allow for seasonal movement in the end grain would I? I could just domino the bread board straight on?

No, you can't really do that. Those borders are going to be fixed and won't come and go with the seasons as the rest of the table will. You would have to allow the whole length of those side borders to float on the table as it comes and goes. The space you would have to leave would look ugly. By space, I don't mean 'gap', it would be a t&g, but there will be a gap down to the tongue.
I would just treat a different coloured side border as part of the table top.

    Cheers
