Well Robson, I'd be pretty interested to hear how you go using that block holder for carving. I'm not sure how steady it would be against lateral forces since I'm not a carver myself. I originally used it for shaping steel for panel repairs on an old car I'm rebuilding, until I got a free standing block, so is used normally in a verticle manner.
Perhaps we can look foreward to a post in the wood carving forum if it's a success?

Nothing untoward about attaching the bench to the wall, will certainly make it more solid and less likely to vibrate providing it has a solid base.
As far as the vinyl is concerned, it may well provide a smooth and easily clean able surface, but is liable to degradatiion from many fluids used in both woodworking and household. I'm certainly not an expert on the best bench surfaces, but for my very unsalubrious bench, a sheet of 9mm MDF suffices on top of the base material. When it reaches the point of no return, off it comes and can be replaced easily and cheaply.
