It is my plan. I don't like to push it forward too much (and hinted at by Marty - it would be pretty crappy if I spent my whole time here suggesting my boats at every opportunity) but I am happy to answer any direct questions you have - you can ask here.

Mik, can the Eureka double up as a one person canoe? would the seats need to be moved?

Here is a pic of the Eureka in single handed mode.
It is being paddled kneeling. With almost all double canoes the front seat is further from the front than the back seat is from the back of the boat. So when paddling singlehanded you sit in the front seat and face in the opposite direction.
If you will predominantly paddle one up I would move BOTH seats a bit closer to the middle. It will still balance with two paddling but will be closer to balancing with only one aboard paddling in the opposite direction.
