so, my old Durden B1200 needs to tyres, and when i look at the wheels i note that the tyre sits in a recess. The question is, what is the best way to crown tyres that sit in a recess?

are you sure the recess is not crowned?
Not much of a crown is needed.
If it is flat you can use something like a thin strip of gaffer tape.
