Japanese Santoku - new
Tadafusa 17cm Santoku, new. Blue steel core, stainless cladding. 'Nashi pear skin' finish; pakka wood ferrule; Magnolia handle. Comes with presentation box.
This is an ideal general purpose knife for someone who wants to discover the wonders of traditional Japanese laminated blades. The blue steel is about HRC 62 and will keep an edge for ages. The stainless cladding supports the core reducing edge chipping due to shocks and of course is highly rust resistant.
I ended up with this due to poor research; my Gyuto is close in blade dimensions and I don't need another knife like it. While the price is low this ticks all the boxes of a quality knife costing a great deal more. If you've only ever used Western knives this will be a revelation in cutting performance and edge life.Cheers, Ern

Can't think of a better option for anyone who is thinking of trying one of these hand forged Japanese knives for the first time.
I already have a santoku, which is my most used knife, so won't be bidding on this knife myself, but can recommend the sentoku as a very versatile knife and therefore a good choice for a 1st Japanese hand forged knife for your kitchen.
The Blue Steel cutting edge is an excellent steel (Hitachi Aogami #2) that is used by traditional Japanese blade smiths and will hold a very sharp edge for longer than any knife that you can buy from your local kitchen shop or department store. It's a high performance steel that needs just a little extra everyday care to enjoy its excellent performance.
That Japanese style handle is also a plus, IMO.
A good buy for someone.Stay sharp and stay safe!
