finger limes?
I'm after some information on finger limes. How do you know when they're ripe? Or do you treat them like the usual limes? Pick them when they're green and garnish your g&t.

A bit of info there.
We have always sampled the fruit when we think it is ripe. The limes tend to stop growing and may fall off if ripe.
On the variety we had the skin would change to a deeper purple colour when ready to pick.
It's a bit of a laborious job to get the pulp out.Those were the droids I was looking for.

Friends really like them with oysters (oysters = Yuk!). They just cut them in half cross wise and squeeze while rotating the fruit. The individual little segments drop out whole onto the oyster and burst in your mouth as you chew the life out of the oyster, giving little bursts of tart limeyness. Or so they claim.
Here in Sydney they have a very limited season fresh and show up mainly at Sydney Fish Markets for some reason. Some are available frozen but not as good a fresh, looking a bit soggy to me.
