Thanks for the input Arron. Ive been asking myself the same question. Not really sure how to quantify how long it might take. With the glass out the strakes look quite and solid. From chatting with people and reading some plywood boat design articles(from a professional designer) it seems like the design has a large factor of safety. The floor is 9mm ply and the rest is 6mm ply. Yo that end I am considering filleting and glassing the joins only.
I'm reasonably confident at this point (with the glass and inwales out) that it can be made watertight and structurally sound without ridiculous effort. But ask me again in a month or two my time estimates are notoriously out if wack.
The mast on the other hand......

Updates
Ok. Its been forever but I have made some progress.
Got back to bare timber on the inside.
Built some stools (my cabinet maker friend won't le me call the saw horses) .
And made a scarfing jig. I accidentally discovered that the offcut wedges work really well to clamp the workpiece in.
I really love my Makita Trimmer Router. The practice scarf I did came out perfect.
And you can just make out my new woodworking vice in the corner of that pic.
