Default oil epoxy or something else in wet areas and food safe

New house and Im on my fourth kitchen renovation. I have used epoxy on various types of surfaces, including one kitchen. It's hard to go past that glass finish. This time I am having jarrah machined for me and the recommendation was to oil the benches. There will be a great deal of lighting to show off the wood (and my mistakes).
Would oil be the better option, do I stick with epoxy or are the other ideas out there?

I didn't think epoxy was food safe (most oil finishes probably aren't either). oiling is ok because you can always sand and re-oil. Epoxy if you chip, burn, scratch the top its going to be ALOT harder to fix and blend in.

I would probably do a bit of a google for food safe polyurethane and just be diligent about not treating it too roughly, especially warm/hot items.

    side note:
after having a wood bench in a rental and as a temporary one in our kitchen its cured me of ever wanting it as our final product. It's a lot more work then an engineered stone product, granted it cant look very nice though.

"Rustins Plastic Coating", for your information pretty much any finish is food safe these days once cured.

Does a bench-top need to be foodsafe?
