Finally got around to hanging the doors. I put the much-maligned knob in the fire for a few minutes (first person to say you should've left it there gets a reddie) and it took on a nice rosy patina, thanks BM.
The snapped screw was removed by cutting a length of brass tube with the internal diameter slightly smaller than the screw. I cut a notch in the end and chucked it up in the drill, then drilled it into the hole. It wrapped around the screw and I was able to withdraw it. I put in a dowel and all is good.
It still needs another coat of traditional wax but other than that, it's finished. Thanks for watching!

. Said before but the grain of the banksia is real nice.
The idea of throwing the knob in the fire to give it a patina is a great idea.

I don't suppose I did expect you to do it, but it was a serious suggestion, so I'm glad you plucked up the courage.
It works for new painted steel stuff too. Just remember to wax it after it's out!
