Default Veneer treatment and finishing questions

This is my first go at marquetry and has raised some questions.

The veneers varied in how easy they were to use - some needed only a modest amount of care when cutting but others (especially ipe) crumbled badly, even when using tape for support. Would using any of the veneer softeners help with this or should I just avoid using these species?

I'm not sure what I'll do with it yet, could be framed or possibly used as a base for a drink serving tray.
It's mounted on thin mdf so I'm wondering if a waterproof finish would be best. Does anyone have any recommendations for the finish?
