Why do plans say so many "off" for multiple parts. For most other similar usage we would say "of". ie "Apples? I'll have two of them thanks"

Well I've never made an apple from a plan , bit in to a few in my time and a few of them were off.
"Off" for off the drawing.
That's what I was taught in Tech Drawing.
In Engineering the term "plans" was never used ,it was always drawing.
Plans were produced by Architects for builders.
But these days every thing seems to be downside up
