I believe that the base metal would be galved both sides of the sheet and rolled for distribution/transport.
It would be uncoiled at the rolling mill and fed ito the rolling maching which would punch the perfs then feed the perf material through a group of up to 20 sets of rolls to form the corregation pattern. The material would then be cut to customer order length on exiting the rolling mill and stacked for delivery. The hole would not be through galvanised, so opening some holes for hooks should not affect the gal status.
The only way to ensure that the holes were through galvanised would be to plate or hot dip the finished sheets.

I use the standard coro pattern with 10% perforation for wine storage applications. I'm not sure that it is available in the miniorb pattern. The product we use is zincalum, not gal. The theory apparently is that during the process of perforating the sheet as it comes off the roll the punching pushes the coating through the hole thereby giving coverage to the inside of the holes.
I am a little dubious of this, but having seen the installed product a couple of years later, and seeing no evidence of corrosion it seems to be valid. Drilling holes in it would of course be a different story. You could cold gal the holes if you wanted to.
The product is excellent as a component of a sound attenuation system which usually and most effectively has three elements of differing properties.

Unless there is a real lot of condensation in your shed or you are really close to the sea I don't think rust around any holes you drill for pegboard clips will be a problem. Not in your lifetime anyway.
