Bricking up/sealing up doorway - how to???

I was hoping to get some insight in to what will be involved in bricking up/sealing up a doorway between our passage and kitchen.

We have a solid brick house and the kitchen renovations we are planning require overhead cuboards to be mounted where this doorway currently is. We have woodern floorboards incase that is relevant.

I would love any tips that you can suggest, questions that come to mind is at the ground level what would go between the bricks and the floorboards? or can the bricks start directly from the floorboards? How would be make it structural/solid enough to take the weight of the cupboards that will be mounted from it on the kitchen side?

Is bricking the best way to fill in the doorway or do we use plasterboard/similar instead. The wall in question is single brick with a metal door surround where the door used to be.

Really looking forward to reading any ideas/tips/ info you can suggest.
