Iron(II) acetate is normally White, Iron(III) acetate is dark brown BUT I'd say the most likely thing that happened is that the Vinegar acted as a Chelating agent and reduced the Ferric oxide (red brown) to Ferrous oxide (back). If teh rust was significant it had probably eaten away the cutting edge.

Thanks for the info Bob the rust was mainly on the shaft and the outer circumference surface of the head and the cutting edge is still looks ok will try it out on some scrap. Cheers Brian.
