They all are typically held in a bench vise or clamped to the work bench in the shed. Out in the field clamped to a fence post or rail. So I guess approximately 900mm high?
I guess if you don't want to clamp them you could make a trestle style with two legs and a few tent pegs for extra holding?
My other concern is how heavy and stable is Matt's table/bench. If we have everyone filling away attached to it will we be incurring each others momentum shaking the table?

I should have mentioned before that my saw vice that I posted earlier was based on Andy's model. My memory is that he clamped his vice in one of those B & D workmate style sawhorse/clamp/mini bench things. I did comment to him that I was going to unashamedly copy his vice, but I would be using a more stable (Horses for courses?) device to hold it.
This is an impressive looking saw vice I spotted a while back and saved in my saw picture library for future reference:
