Cupboards for Pop-Up Van need ideas

I like the idea of a pop-up van so I bought an old one with the intention of stripping it out and making the cupboards to suit me.
The cupboard height is of course governed by the height of the bottom half of the van, so the sink and the stove are very low, about sitting on a chair height.
My plan is to make the sink and stove height correct for me which would be too tall for the roof to lower.
So make the new cupboard the height of the bottom section of the van. Now make a top section of cupboard hinged to the lower carcase to fold down when the roof is lowered.
Can you think of a better way to get over this problem
