Beautiful Beetroot Recipe

Some years back a recipe for pickled beetroot was posted on this forum.It was posted as beautiful beetroot.
It was the best pickled beetroot recipe I have used but because of computer failures etc I have lost the recipe.
Does anyone remember it and if so could they please post it on this forum
