Does anyone have any tips for timbers to both go with or stead clear of for humidors? I was led to believe that Cedar should be used. Any help would be great.

Spanish Cedar to line humidors.
Apart from that I have seen Humi's made from a variety of stable, minimal oil timber types.
It must end up air tight.
The trend is towards Digital Hydrometers and contained Humidity control devices as Containers of fluid/Green Foam are difficult to regulate.

I believe Spanish cedar is preferred for the lining because it helps to maintain constant humidity, i.e. it damps out fluctuations. Not sure if this is true or just a tradition.
Most that I have seen use highly decorative timbers for the carcass, but probably nothing that's too aromatic - e.g. coachwood, camphor laurel.
