Do you mean in the displayed reply (as shown above) or in the editor box while you're composing your reply?
If the latter, maybe your choice of editor has changed? (User Control Panel/Edit Options, at the bottom of the page)
I've always used the Standard Interface, which shows everything in text with embedded codes so I don't know how the others actually look... but I'm pretty sure there's a WYSIWYG version which would, I imagine, display quoted text, etc. the same as it looks in the final post.
If you look at my entry in "Nothing to do with woodwork" thread entitled "We won, We won" you will see the quote is shown just in square brackets and not highlighted.

In AFL they score behinds.
I'm a dyed in the wool rugby union fan and the only thing wrong with living down here is they way Channel Seven treats rugby. If it's AFL I even know when a player wipes his nose but rugby is only shown when it's an international, only when the Wallabies are playing and even then the cretins put it on in the early hours of the morning.
