Yes, do the six pieces together. I have tried various jigs and found that after a bit of practice, it is quicker and easier to just use a plane, although I once had success using a belt sander on...

Have a look at the "Tortoise" in Bolgers book "Build The New Instant Boats".
It is the size you are looking for , easy and cheap to build and is a lot of fun to use.

I think everyone has missed the point of Rob's question. There is a type of articulated oars thetwhen you sit facing forward , you still pull on the oars as if rowing normaly.

have a look at the One Ocean Kayaks site, I think they have details of making a scarfing jig , although I agree with others that it is quite easy to do with a sharp plane.

I have built several CLC kayaks. Mill Creek 13, Mill Creek 16.5, Chessapeake 16, and Sassafrass canoes.I think they are all good for their designed purpose.
