I have used wheat flour mixed with epoxy for fillets on my sassafras canoe. I used it because of the color and it is still as good as new approx 5 years later.

Have a look at the "Tortoise" in Bolgers book "Build The New Instant Boats".
It is the size you are looking for , easy and cheap to build and is a lot of fun to use.

I think everyone has missed the point of Rob's question. There is a type of articulated oars thetwhen you sit facing forward , you still pull on the oars as if rowing normaly.

I have built several CLC kayaks. Mill Creek 13, Mill Creek 16.5, Chessapeake 16, and Sassafrass canoes.I think they are all good for their designed purpose.
