General Rule of thumb for all timbers is one year per 25mm thickness.

Make sure to seal the ends.

Cypress has one of the lowest shrinkage rates of any timber in the world. Very stable stuff. We have air dried slabs of Monterey cypress that are 50mm thick for 8 months and they have performed admirably. If you are going to join timbers I would give it a full year though.
