Hi Ticky, I finish everything except the block with Minwax wipe on satin varnish and I polish sand the top to 2000grit then polish with "EEE" then buff with Traditional wax from Ubeaut. Looks like glass when I finish. People cut on the but most just use them for prepping on or BBQ areas. I enjoy making them.

Here's a pic I found of the latest cutting board I did. 500wide 900long and 100 mm thick. Weighed 43kg's. Was for a client who's wife had back probs. It saved her bending down that little bit. Timbers are Spotty gum and Forest Red gum. Finished with Traditional Wax.

They are really nice DJ.
Here's one I made a couple years ago for a house warming gift.
Normally, I would plug the holes, & I had the plugs there to do just that, but I decided the the bolts would give it a bit more of a rustic look which I thought would go with the house better.
