I came to setting B3, which had either 1 or 0 as an option - I am thinking this could be variable or constant torque. As when I changed this, I can no longer may it slow down and certainly not stop with my "jam a stick in it" scientific test . So I'm going to leave it as that for now, let him use it, and see if I did actually change the right setting by trial and error.
I think you solved the torque problem within the ability of the system you have. I believe the cutting out is how the controller protects itself and the motor. Otherwise the magic smoke escapes and the system becomes disinterested in further toil. My Woodfast with a DC system does the same when overloaded.

If your system continues to cut out with the new setting, using a smaller razor sharp gouge and taking lighter cuts will reduce or prevent the cut outs. If your father gets to the point of hogging out 24 inch diameter dry bog oak with a 3/4 inch bowl gouge, you will need to upgrade to a 2 or 3 horsepower motor and controller.

This, in addition to costing a pretty penny will have enough power to seriously injure or kill a person.

The late Ed Moulthrop of Georgia worked big, using tools 6 - 8 feet long. He was once thrown off his feet and against the wall cracking several ribs.

Ed's son Philip, who worked smaller than his dad but used some of the big tools in the rack behind him:

They used hook tools that they made themselves. I had a 15 second encounter with a hook tool I bought at a turners retirement sale. Put a bowl blank on the lathe eased the freshly sharpened tool in, bowl flew out of the lathe bouncing off the ceiling and hook broke off the tool. OOOOOKKKKKAY!!!! We will stick with bowl gouges and scrapers, thank you very much.

I look forward to hearing how the new setting works.
So much timber, so little time.

Just to add, IMO got back to me the next working day with the correct manual. Makes all the difference when you are looking at the right manual . It seems the B3 setting I was changing was actually some sort of "boost" auto/constant setting...
