What is it with walking sticks and wizardy old men with beards 
I'd like to see it closer but looks fantastic from this distance

They're called 'spirit faces' and I think they represent the spirit of the tree from which they came. At least thats the folk lore I've heard about. Nowadays it is a popular motif which especially lends itself to walking sticks... long narrow design works well.
